Crab Burgers

Crab Burgers

Ingredients:

1/3 cup mayonnaise
1 large egg, lightly beaten
2 tablespoons thinly sliced scallions, white tip only
1/2 teaspoon Worcestershire sauce
1 teaspoon dry mustard
1 teaspoon hot sauce
Salt and freshly cracked black pepper
1 pound lump crabmeat, picked over for shells
2 1/2 cups panko bread crumbs
1 cup vegetable oil, for frying
4 kaiser rolls
2 tablespoons unsalted butter, room temperature
4 pieces butter lettuce
1 large heirloom tomato, sliced

Directions:

In a large bowl, whisk mayonnaise, egg, scallions, Worcestershire sauce, dry mustard, hot sauce, and salt and pepper, to taste. Fold in the crabmeat and 1 cup of the bread crumbs until just combined. Line a baking sheet with parchment paper. Divide the mixture into 4 equal portions and form into patties. Put the patties on the baking sheet, cover with plastic wrap and refrigerate for at least 30 minutes to firm up.

Remove the crab patties from the refrigerator. Place the remaining bread crumbs in a shallow dish. Dredge the patties in the bread crumbs and pat along the edges. 

Heat the oil in a 12-inch cast iron skillet over medium-high heat until the oil is hot but not smoking. Place the patties into the oil and cook about 3 minutes per side. Transfer to paper towel lined plate to drain. Season the patties with salt while they are still warm.

Lemon Pepper Cod

Since I live in Alaska, fresh fish just seems oh-so-appropriate.  I picked up some Cod the other day from the store, and after reading through tons of recipes, I decided to just wing it; I served this with brown rice and my sweet potato fries.

Lemon Pepper Cod

1 pound whitefish, such as cod
2 tbsp olive oil
1 tsp lemon pepper seasoning
Lemon juice

Pre-heat the oven to 325 degrees.  Cover a baking sheet with foil.  Place half the cod on one side of the baking sheet, and the other half on the other side.  In a small bowl, combine the olive oil and the lemon pepper seasoning.  Brush the oil mixture onto the fillets of fish.  Then spritz lemon juice on the fish, to taste.  Place in oven, and bake until cooked through, about 15-20 minutes.

Shrimp Stir Fry

My sister & I cooked this the other night for us, our brother, and her fiance. Ok, she actually did most the cooking. But I'll admit it turned out delicious!



Shrimp Stir Fry

Adapted From: Better Homes & Garden Cookbook

1 pound fresh or frozen medium shrimp
1/3 cup water
1/4 cup soy sauce
2 Tbsp white wine vinegar
1 Tbsp cornstarch
1 1/2 tsp sugar
1 Tbsp cooking oil (I used safflower)
2 cloves garlic, minced
1 package stir fry vegetables
2 cups hot cooked rice

Thaw shrimp, if frozen. Set aside. In a small bowl, combine water, soy sauce, vinegar, cornstarch, and sugar; set aside.

Heat oil in a wok or a 12-inch skillet over med-high heat (add more oil as necessary during cooking). Cook & stir the garlic in the hot oil for 15 seconds. Add the veggies; cook & stir for 3 minutes. Remove the veggies from wok with a slotted spoon. Stir soy sauce mixture. Add to work; cook and stir until slightly thickened and bubbly. Add shrimp; cook about 3 minutes or until shrimp are opaque. Stir in vegetables; heat through. Serve over rice.
