Herb Gravy

From: Better Homes & Garden special issue - Holiday Cooking

Time: start to finish, 20 minutes
Makes: about 2 1/4 cups

Pan drippings from roasted turkey, goose, or chicken
Chicken broth
1/4 cup all-purpose flour
2 tbsp apple brandy, brandy, or chicken broth
1 tbsp snipped fresh thyme or 1 tsp dried thyme, crushed
1 tbsp snipped fresh sage or 1 tsp dried sage, crushed
Salt
Ground black pepper
Sprig of fresh thyme (optional)

**These are the directions from the magazine; but just an fyi, I basically just took these things and started throwing them together, and it turned out great. I am no expert at thanksgiving cooking, so the whole fat-separating-pan-drippings-idea was hard for me to figure out!

Pour pan drippings from roasted bird pan into a fat separator or a large glass measuring cup. If using a fat separator, pour off fat into a glass measuring cup. (If using a large measuring cup, use a spoon to skim and reserve fat from the drippings.) Pour 1/4 cup of the fat* into a medium saucepan; discard remaining fat.

Add enough chicken broth to the drippings to equal 2 cups liquid. Stir flour into fat in the saucepan. Stir drippings mixture all at once into flour mixture in the saucepan. Stir in brandy, thyme and sage. Cook and stir over medium heat until slightly thickened and bubbly. Cook and stir for 1 minute more. Season gravy to taste with salt and pepper. Pour gravy into a gravy boat or bowl. If desired, garnish with a sprig of fresh thyme.
*Note: If there is no fat, use 1/4 cup melted butter.

Parmesan & Black Pepper Smashed Potatoes

From: Cooking Light Nov 2008 issue

3 lbs baking potatoes, cut into pieces
1 1/4 tsp salt, divided
2 tbsp butter
1 1/2 cups freshly grated Pamigiano-Reggiano cheese
3/4 tsp freshly ground black pepper
1 1/2 cup milk
1/4 cup chopped fresh flat-leaf parsley

Place potatoes in a saucepan, and cover with cold water to 2 inches above. Add 1/4 tsp salt; bring to a boil. Reduce heat, and simmer 15 mins or until tender; drain. Return the potatoes to pan over low heat; add remaining 1 tsp salt and butter to pan. Mash the potatoes with a potato masher to desired consistency.

Add cheese and pepper to potato mixture; stir until cheese melts. Stir in milk; cook 1 minute or until thoroughly heated, stirring frequently. Remove from heat; stir in parsley.

Thanksgiving Cooking

This year my family was dispursed in different directions, so I decided to stay home and cook Thanksgiving dinner at my apartment in Louisville. Over the course of a few days, I cooked many different foods, most of which I will post the recipes for on here. [Some were family recipes, so I have to preserve the sanctity of my heritage and keep those a secret. :)] I hope everyone had a fabulous Thanksgiving holiday, and had lots of great food to eat!


Pre-Thanksgiving Day Roasting:

I had a 7.77 pound turkey, legs & wings removed, neck and gizzards removed as well. I purchased the Apple & Spices Turkey Brine from Williams & Sonoma, and followed the directions exactly. I let the turkey sit in the brine for about 15 hours, overnight, and once I rinsed it off, I used the following recipe for roasting.

Ingredients
1 whole bone-in turkey breast, 6 1/2 to 7 pounds
1 tablespoon minced garlic (3 cloves)
2 teaspoons dry mustard
1 tablespoon chopped fresh rosemary leaves
1 tablespoon chopped fresh sage leaves
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons good olive oil
2 tablespoons freshly squeezed lemon juice
1 cup dry white wine


Directions


Preheat the oven to 325 degrees F. Place the turkey breast, skin side up, on a rack in a roasting pan.


In a small bowl, combine the garlic, mustard, herbs, salt, pepper, olive oil, and lemon juice to make a paste. Loosen the skin from the meat gently with your fingers and smear half of the paste directly on the meat. Spread the remaining paste evenly on the skin. Pour the wine into the bottom of the roasting pan.


Roast the turkey for 1 3/4 to 2 hours, until the skin is golden brown and an instant-read thermometer registers 165 degrees F when inserted into the thickest and meatiest areas of the breast. (I test in several places.) If the skin is over-browning, cover the breast loosely with aluminum foil. When the turkey is done, cover with foil and allow it to rest at room temperature for 15 minutes. Slice and serve with the pan juices spooned over the turkey.

Candy Crunch Pudding Pie

This was the hit of the weekend! My dad's favorite candy is Heath Bar, so he was in heaven. The funniest part was that my mom kept calling it "Turtle Pudding Pie" because it was in truth almost like a turtle pie! It was absolutely delicious, and super easy to make! To make it more turtle-pie-like, just use caramel topping on top and maybe some chopped pecans, and voila! You have a turtle pie instead! :)


Candy Crunch Pudding Pie

Ingredients:
2 cups cold milk
2 pkg. (4-serving size each) JELL-O Chocolate Instant Pudding
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
2 milk chocolate English toffee candy bars (1.4 oz. each), chopped, divided
1 OREO Pie Crust (6 oz.) (I made mine from scratch; see below for recipe)
1 square BAKER'S Semi-Sweet Chocolate, melted (I omitted; could use chocolate syrup instead, or caramel topping)

Directions:
Beat milk and dry pudding mixes with whisk 2 min. or until well blended. Gently stir in half of the whipped topping and all but 3 Tbsp. of the candy.

Spoon into crust.

Top with remaining whipped topping and candy. Drizzle with chocolate. Serve immediately, or cover and refrigerate until ready to serve. Store leftovers in refrigerator.

Oreo Pie Crust

1 pkg Oreo Cookies, pulled apart from cream and crushed
1/3 cup butter, melted

Mix together cookie crumbs and butter. Press crumb mixture into 8 or 9 inch pie pan. DO NOT BAKE.

Fresh Basil Pasta Salad

I made this while home in Alabama, to accompany a BBQ dinner this past Saturday evening. It turned out nice and light, fresh tasting if you will. I would have preferred a little more flavor, so next time I think I will add balsamic vinegar to "spice" it up a tad. There are suggestions at the end of the recipe for things you can add, so feel free to either leave as is, or add whatever you like. It's great for a summer salad, for a big family gathering like ours was, or just for a nice side to a hearty dish like ribs or BBQ pork.

Fresh Basil Pasta Salad

Servings: 6-8
1 lb. Rotini Pasta
2 lbs. roma tomatoes, sliced or diced
3-4 cloves garlic, minced
1 tsp salt
black pepper to taste
1/4 c. extra virgin olive oil
fresh basil leaf, chopped coarsely (about 1/3c)
1/4 c. grated parmesan cheese

Mix together the tomatoes, garlic, salt, pepper, olive oil, and basil.
Refrigerate for 2 hours.
Cook pasta, drain, rinse in cold water.
Mix pasta with tomato mixture.
**I added more basil to my pasta salad, for more flavor, probably about 2 Tbsp.
Sprinkle with cheese.

**There are a couple things that you can add, if you desire: black olives (sliced), green onions (chopped), balsamic vinegar, and mozzarella cheese can be substituted for the parmesan.

New York Cheesecake

I am not a big fan of just plain cheesecake, but my family wanted some good desserts this weekend, so I made this so that we could all "dress it up" to each our own liking. I followed the recipe exactly, and yet it still cracked at the top and the texture wasn't 100%...however it still tasted yummy, and everyone ate it up! I guess cheesecake doesn't have to be perfect!

New York Cheesecake

CRUST:
1 1/2 cups graham cracker crumbs
1/2 cup butter (1 stick) melted
1/3 cup powdered sugar

CHEESECAKE:
3 8oz packages cream cheese, room temp
4 eggs room temp
1 cup sugar
1 teaspoon vanilla

1. Heat oven to 350 degrees.
2. Combine graham cracker crumbs, powdered sugar, and butter
3. Press into bottom of an 8 inch springform pan. Wrap a square of foil around bottom of pan.
4. In a large bowl, beat cream cheese, eggs, sugar and vanilla until smooth. Pour mixture over prepared crust.
5. Bake at 350 for 50 minutes (until center set).
6. Place a pie tin, or shalow baking pan filled with water on bottom rack of oven. For added moisture, and to help prevent top from cracking.
7. Let cake cool completey before removing from pan.
8. If you prefer, you can spread 1 pint of room temperature sour cream over the top of cheese cake, and return to oven for 5 minutes. (I never do this). <--note from the recipe author, I didn't do this either 9. You can also add any fruit pie filing to the top after cooling.

Sweet Home Alabama

This week I'm visiting my family in Alabama. Once my mom found out I was a pretty decent cook some time ago, she suckers me into cooking anytime I'm at home. Not that it takes much convincing, I love whipping up homemade meals! I didn't have many chances last year, so I'm taking every opportunity these days. This week, my dad actually asked that I cook one night so he'd have some leftovers to take to work. I took an old favorite recipe, Ritz Parmesan Chicken, changed it up a bit, and then found a good looking potato bake from Kraft Foods. Hopefully you'll like it as much as my sister and I did!


Garlic Parmesan Chicken
1/4 cup mayonnaise
1 Tbsp lemon juice
1 cup Panko Japanese bread crumbs
1/4 cup Parmesan cheese
1 Tbsp garlic salt
3-4 small boneless skinless chicken breasts (about 1 lb)

Preheat oven to 400°F. Mix mayo and lemon juice in medium bowl; set aside. Combine bread crumbs, cheese and garlic salt in separate medium bowl. Dip chicken in mayo mixture, then roll in bread crumb mixture until evenly coated on all sides. Place on ungreased baking sheet.

Bake 20 min. or until chicken is cooked through.


Italian New Potato Bake

3 Tbsp olive oil
2 cloves galic, minced
1 1/2 tsp Italian seasoning
1/4 tsp salt
2 lb new potatoes, cut into quarters
1/2 cup grated Parmesan cheese

Mix oil, garlic, Italian seasoning, and salt with wire whisk until well blended. Pour over potatoes in large bowl. Add grated topping; mix lightly.

Place in 15x10x1-inch baking pan.

Bake at 400 degrees for 45 minutes, stirring after 20 minutes.

Peanut Butter Cookies

I've been on a cookie-baking high lately. When work gets slow, I head to the kitchen to keep busy! Of course, my guy friends are loving it! They are getting spoiled with all the cookies I'm making. Beef Stroganoff

Ingredients:
1 lb ground beef
1 cup Sour Cream
2 Tbsp. flour
1/2 cup water
2 tsp. instant beef bouillon
1/4 tsp. pepper
2 Tbsp. butter or margarine
1-1/2 cups sliced fresh mushrooms (optional: I did not use)
1/2 cup chopped onion
1 clove garlic, minced
4 cups hot cooked noodles

Directions:
Mix sour cream and flour in small bowl. Stir in water, bouillon and pepper; set aside.

Brown the ground beef in a skillet over medium to medium-high heat. Drain. Place beef back in skillet, add butter. Add vegetables to skillet; cook and stir until butter has melted and onion is tender. Reduce heat to medium.

Add sour cream mixture; cook until bubbly, stirring constantly. Cook an additional minute. Spoon over hot noodles.

**Tip: double the sour cream mixture for a much creamier recipe. Mine turned out a little too dry.

Amy's Guacamole

I created this guacamole recipe this past weekend while staying at my cousin Andrea's house. My sister & I lost power for an entire 6 days in our apartment due to Hurricane Ike's winds coming through Louisville and knocking down tons of trees! So we shacked up with Andrea and her 2 year old daughter all week, and had tons of fun. Another cousin drove down from Cinncinnati with her two daughters and we had a Mexican themed dinner night. I was in charge of guacamole! I took a recipe from Andrea's friend, and tweaked it a bit to my taste (basically I just threw a bunch of stuff in until it tasted good). I have no idea if it was any good, because it was my first taste of guac! So here is my very own recipe, and hopefully it's a decent one!

Amy's Guacamole

2 medium avocados, pitted and peeled
1/2 onion, chopped
1/2 tomato, chopped
1/4 can rotel
5 squirts of lime juice
2 tablespoons Mexican spices
Optional: sour cream (I didn't add this, but it can be added if you so desire!)

Mix all ingredients together in a blender or food processor. Serve with tortilla chips.

Chicken Carbona Risotto

Ingredients
1 Tbsp. oil
1 lb. boneless skinless chicken breasts, cut into strips
1 can (10-3/4 oz.) condensed cream of chicken soup
1 cup canned or frozen peas
1-1/2 cups water
2 cups instant white rice
1/4 cup OSCAR MAYER Real Bacon Bits
1/4 cup KRAFT Grated Parmesan Cheese

Directions
HEAT oil in large skillet on medium-high heat. Add chicken; cook and stir 4 to 5 minutes or until cooked through.
ADD soup, peas and water; bring to boil. Stir in rice; cover. Reduce heat to medium-low; simmer 5 minutes.
STIR in bacon bits and Parmesan cheese.

Notes:
Next time I would use less water. It turned out very runny, and I had to let it sit for a long time to thicken up enough to be a good consistency.

Caramel Cream Sandwich Cookies

Cookies
3/4 cup firmly packed brown sugar
1 cup butter or margarine, softened
1 egg yolk
2 cups all purpose flour

Frosting
2 tbsp butter (do not sub margarine)
1 1/4 cups powdered sugar
1/2 tsp vanilla
4 to 5 tsp milk

In large bowl, beat brown sugar and 1 cup butter until light and fluffy. Add egg yolk; blend well. Stir in flour; mix well. Cover with plastic wrap; refrigerate 15 minutes for easier handling.

Heat over to 325 degrees. Shape dough into 1-inch balls. Place 2 inches apart on ungreased cookie sheets. Flatten to 1 1/2 inch circles with fork dipped in flour. Bake at 325 degrees for 10 to 14 minutes or until light golden brown. Immediately remove from cookie sheets. Cool completely.

Heat 2 tbsp butter in medium saucepan over medium heat until light golden brown. Remove from heat. Stir in remaining frosting ingredients, adding enough milk for desired spreading consistency; blend until smooth. Spread 1 tsp frosting between 2 cooled cookies. Repeat with remaining frosting and cookies. (If frosting becomes too stiff as it cools, add enough additional milk for desired spreading consistency.)

Yields 2 1/2 dozen cookies

Gourmet Mint Brownies

Filling
1 (8 oz) pkg cream cheese, softened
1/4 cup sugar
1 egg
1 tsp mint extract
4 drops green food color**

Brownies
1 cup margarine or butter
4 oz unsweetened chocolate, cut into pieces
2 cups sugar
2 tsp vanilla
4 eggs
1 cup all purpose flour

Frosting
2 tbsp margarine or butter
2 tbsp corn syrup
2 tbsp water
2 oz unsweetened chocolate, cut into pieces
1 tsp vanilla
1 cup powdered sugar

Heat oven to 350 degrees. Grease and flour 13x9 inch pan. In small bowl, beat cream cheese and 1/4 cup sugar until smooth. Add 1 egg, mint extract and food color; mix well. Set aside.

In large saucepan, melt 1 cup butter and 4 oz chocolate over very low heat, stirring constantly. Remove from heat; cool slightly. Stir in 2 cups sugar and 2 tsp vanilla. Add 4 eggs, 1 at a time, beating well after each addition. Stir in flour; mix well. Spread in greased and floured pan. Carefully spoon filling over brownie mixture. Lightly swirl filling into brownie mixture.

Bake at 350 degrees for 45 to 50 minutes or until set. Cool completely.

In heavy saucepan, bring 2 tbsp butter, corn syrup and water to a rolling boil. Remove from heat. Add 2 oz chocolate; stir until melted. Stir in 1 tsp vanilla and powdered sugar; beat until smooth. Frost cooled bars. Cut into bars. Store in refrigerator.

Yields: 36 bars.
**You can use whatever color food coloring you like; I made these brownies for a friend's baby shower recently, and used pink because she had a beautiful baby girl! :)

Easy Honey Garlic Chicken

1 lb. boneless skinless chicken breasts, pounded thin and sliced
1 package frozen pepper stir-fry vegetables
1/2 cup KRAFT Zesty Italian Dressing
2 Tbsp. honey
4 cloves garlic, minced
3/4 tsp. ground ginger
2 cups hot cooked long-grain rice

COOK chicken in large skillet sprayed with cooking spray on medium-high heat 5 min., stirring occasionally.

ADD vegetables, dressing, honey, garlic and ginger.

COOK and stir an additional 5 min. or until chicken is cooked through and vegetables are heated through. Serve with rice.

Chocolate Pecan Pie

Ingredients:

3 eggs

1 cup sugar

1 cup light corn syrup

1/4 cup butter, melted

1 tsp vanilla

1 1/2 cup pecan halves

1/2 cup semi-sweet chocolate chips

1 prepared pie crust


Directions:

Beat together eggs, sugar, corn syrup, butter, and vanilla until well blended. Stir in pecan halves and chocolate chips, and pour into pie crust.


Bake at 375 degrees for 55-60 minutes, or until set. Remove pie and place on a cooling rack to let cool completely before serving. Refrigerate any leftover pie.

Speedy Chicken Stir Fry

Prep Time:10 min
Total Time:25 min
Makes:4 servings, 2 cups each


8 oz. angel hair pasta (capellini), uncooked
2 cups small broccoli florets
1 lb. boneless skinless chicken breasts, cut into thin strips
1/2 cup KRAFT Asian Toasted Sesame Dressing
2 Tbsp. soy sauce
1/4 tsp. each: ground ginger, garlic powder, crushed red pepper
1/3 cup chopped PLANTERS Dry Roasted Peanuts


COOK pasta as directed on package, adding broccoli to the boiling water for the last 3 min. of the pasta cooking time.


MEANWHILE, spray large nonstick skillet with cooking spray; heat on medium-high heat. Add chicken; cook 6 to 8 min. or until cooked through, stirring occasionally. Stir in dressing, soy sauce, ginger, garlic and crushed red pepper; cook 1 min., stirring occasionally.


DRAIN pasta mixture; place in large bowl. Add chicken mixture; mix lightly. Spoon evenly into four serving bowls; sprinkle with the peanuts.

Decadent, Delicious Chocolate Truffles

Chocolate Truffles

When I first saw this recipe, it looked easy enough, but at the same time I figured I would find a way to mess it up somehow. It's in my nature to mess up at least one recipe when I'm baking multiple things at a time. However, this truffles turned out fabulous! And I even went so far as to venture out and make a second batch with my own flavoring idea - mint!

Ingredients
1/2 pound semisweet chocolate, finely chopped
1/2 cup heavy cream
1 to 2 tablespoons dark rum, Grand Marnier, Bourbon, or other liquor
1/4 to 1/2 cup unsweetened cocoa, confectioners' sugar, sweetened ground chocolate, or finely chopped nuts

Preparation
Put the chocolate in a bowl. In a small saucepan or microwave, heat the cream to a boil. Pour the cream over the chocolate and shake the bowl gently to settle the cream. Cover with a plate or lid and set aside until the chocolate melts, about 5 minutes. Whisk the mixture until smooth and shiny. Stir in the rum or other flavoring (this is where I used mint extract in my second batch - 2 teaspoons). Cover the surface of the chocolate with plastic wrap. Set aside in a cool place until the chocolate firms up, about 2 hours. (To speed this up set the bowl of chocolate over another bowl of ice and stir until the desired consistency.)

Line a baking sheet with waxed or parchment paper. Use 2 spoons to drop small mounds/balls of chocolate, about 1/2 to 1-inch high on the paper (depending on the size you want). Then chill your hands under a faucet of running cold water or by using an ice bath. Roll each chocolate mound between your open palms to make smooth round balls. *This was tough; I ended up leaving the balls in the fridge for 2 1/2 hours, and they were still a tad too soft when I was rolling them. I suggest leaving them overnight if possible, or at least 3 hours. It didn't hurt, they still came out fine, but I would have preferred them to be firmer.

Pour the cocoa or coating of choice into a cake pan or on a plate. Roll the truffles in the coating or use a clean spoon to pour the coating on the truffles. Repeat with all the truffles. Refrigerate until ready to serve.

To serve, scoop the truffles out of the cocoa with a fork or a slotted spoon. Put the truffles in small candy cups and serve now or refrigerate until ready to serve.

Miniature Raspberry Cheesecakes

Mini Raspberry Cheesecakes


I made these for the same friend's baby shower as the strawberries. You can put whatever preserve topping you prefer on top, and top it with the same fruit. I always leave a couple cheesecakes un-topped, just in case there are guests that prefer their cheesecakes plain!


Ingredients
1 box No Bake Real Cheesecake, Jell-O
5 Tablespoons butter, melted
1 1/2 cups cold whole milk
12 teaspoons red raspberry preserves, stirred to loosen
12 fresh raspberries

Preparation
Line one 12 cup cupcake pan with paper liners. *You can also use a mini-cupcake pan, and make 24 mini-miniature cheesecakes. The recipe actually makes more than it says, so I usually combine one 12 mini-cupcake pan and one 12 regular size cupcake pan.

Using a wooden spoon, mix packaged graham cracker crumbs with butter in a medium bowl. Divide crumb mixture among liners. Press crumbs to form even layer.

Beat packaged cheesecake filling and milk in large bowl until thick and fluffy, about 2 minutes. Spoon batter equally among prepared crusts; spread to smooth tops.

Spoon 1 teaspoon preserves evenly over cheesecakes. Chill 1 hour until set. Decorate with raspberries.

Strawberry Ricotta Flowers

Rachael Ray's Strawberry Ricotta Flowers

I made these for my SIL's baby shower last summer, so when asked to do the desserts for a friend's baby shower, these were an easy choice. They are simple to make, and everyone loves them - kids and adults alike!

Ingredients
10 strawberries
1 cup ricotta cheese
4 tablespoons honey
Zest of 1 orange
10 mint leaves

Preparation
Hold a strawberry with the stem side in your hand. With a knife, make an X in the bottom of the berry, cutting almost 3/4 of the way into it. Make one more cut right through the middle of the X so it looks like a star.

In a medium-size mixing bowl, mix up the cheese, honey and orange zest. Scoop the mixture into a re-sealable plastic bag and snip off one corner to resemble a pastry bag. Gently squeeze the cheese mixture in the middle of the star shape slice you have made in each berry so it looks as if it has little petals. Garnish each berry with a mint leaf.
