This is so easy to do, I'm really not sure why more people don't make pancakes like this? It's called from scratch. My mom thinks I'm some kind of baking wizard when I make these, to which I of course eat up all of her praise when she says things like that. But it's so simple, and so much tastier than a box mix (ahem Bisquick). However I do have one tip - I have tried pancakes on various cooking surfaces, and an electric griddle has been the most successful versus using a skillet on the stove. Maybe I'm not that great of a cook, but those flat top griddles are better at thorough cooking + not steaming up when hit with butter.
1 cup flour
1tbsp sugar
2 tsp baking powder
1/4 tsp salt
1 beaten egg
1 cup milk
2 tbsp cooking oil
In a medium mixing bowl stir together the flour, sugar, baking powder, and salt. Make a well in the center of the dry mixture; set aside.
In another medium mixing bowl combine the egg, milk, and cooking oil. Add egg mixture all at once to the dry mixture. Stir just till moistened (batter should be lumpy).
Pour about 1/4 cup batter onto a hot, lightly greased griddle or heavy skillet (I like to use butter to grease the surface, or more cooking oil). Cook over medium heat about 2 minutes on each side or till pancakes are golden brown, turning to second sides when pancakes have bubbly surfaces and edges are slightly dry. Serve warm.

Beef Stir Fry

I got this recipe from the book called "The Fat Flush Plan", and it was deeee-licious! The cayenne mixed with ginger - ohmygah. Just try it. You'll love it.
Beef Stir Fry
1/4 cup chicken broth
1 pound of flank steak, sliced thin
1 red bell pepper, chopped
1 green bell pepper, chopped
1/2 onion, chopped
2 cloves of garlic, minced
1/4 tsp cayenne pepper
1 tsp ground ginger
Sautee the beef in the broth in a skillet on medium high heat until almost cooked through. Add peppers, onions, and garlic and continue cooking. Add spices. Serve alone or over brown rice.
(This can be made with any protein - chicken, shrimp, etc.)

Lemon Pepper Cod

Since I live in Alaska, fresh fish just seems oh-so-appropriate. I picked up some Cod the other day from the store, and after reading through tons of recipes, I decided to just wing it; I served this with brown rice and my sweet potato fries.
Lemon Pepper Cod
1 pound whitefish, such as cod
2 tbsp olive oil
1 tsp lemon pepper seasoning
Lemon juice
Pre-heat the oven to 325 degrees. Cover a baking sheet with foil. Place half the cod on one side of the baking sheet, and the other half on the other side. In a small bowl, combine the olive oil and the lemon pepper seasoning. Brush the oil mixture onto the fillets of fish. Then spritz lemon juice on the fish, to taste. Place in oven, and bake until cooked through, about 15-20 minutes.
